I was looking here to find a snack thing to take to a July 4 party (we are actually going somewhere this year -- unusual for us!). I think I have settled on Shabby's cucumber rounds. Sounds really good and cucumbers are just coming in for the season.
Meanwhile, I thought of another snack involving cream cheese that I'll share. This has to be served hot, so it won't work for the occasion I need it for, but it sure is good.
Take a bunch of jalapeno peppers and split lengthwise. Clean out the seeds. Stuff with cream cheese. Wrap individually with a half piece of bacon. Put on a cookie sheet and bake at 425 until the bacon is done -- about 20 minutes or so.
Serve as a snack, or with black beans, rice, and your favorite hops -based beverage as a meal.
Yum.

You really can't go wrong with bacon and cream cheese, can you? The poppers sound delicious.

Oohhh that sounds delicious. We are staying home this 4th and resting up. I am exhausted and so his hubs. He goes back to swing shift today, after being on graveyard for the past 2 years. He never really got his sleep pattern adjusted, so he is happy to go back to swing shift. But he is exhausted and we will take the long weekend to recharge. Our daughter will probably come over and we will barbecue. Maybe bacon wrapped hot dogs. They are wonderful. I take large hotdogs or sausage and wrap them in bacon. Secure with a toothpick. Than wrap in foil and barbecue. Best hotdog I have ever tasted. I will make mini corn on the cob. Just use the frozen half ears. Cover with butter and Lowery's seasoning, wrap in foil and barbecue also. Add some potatoe or macaroni salad and we are good to go. Albertsons had rootbeer on sale a couple weeks back, and I stockpiled. Will be having rootbeer floats for dessert. Can hardly wait. Hopefully it will be a bit cooler than this past weekend What culinary delights is everyone making for July 4th?

I've never thought of putting Lowery's on corn. Sounds great; definitely add that to my next cookout menu!
We had kids and spouses in yesterday for our July 4 BBQ. Work schedules would not allow us to get together on Thursday, so we improvised. Did the baby backs, baked beans, zucchini/onion/corn mixture, slaw, baked potatoes, and key lime for desert.
No complaints!

Those poppers sound so good! And I'm going to try corn with the Lowery's seasoning, too. All this talk of food is making me hungry--and I just ate, LOL!

I probably won't do anything in particular for the 4th unless someone else in the family decides to pull something together and invite me. I wouldn't mind going out for dinner. Last July 4 I was in a hotel room in Baltimore with a load of dirty laundry to do and delivery pizza. This year at least I'll be home where all my books are.

I don't know if anyone else has tried the pepper poppers that allen posted, but we've made them numerous times since then. We even took them to a family Christmas party and they were a hit. Thanks so much for a great recipe, allen. I can't wait to grow lots and lots of peppers this coming summer!
