I've been looking for easy snacks to make when my nieces and nephews are here to visit. I found this one today--most of you may already have it, but it is new to me.
Mexican S'mores
Flour tortillas Peanut butter (creamy or crunchy) Mini marshmallows Mini chocolate chips (can use regular sized chips)
Spread peanut butter over flour tortilla. About a 1/3 of the way inside, make a row of mini marshmallows, then go over a third and make a row of mini chocolate chips. Fold in ends of tortilla and then roll up the sides. Put in foil. Heat in 350 oven approximately 10 minutes. Let cool a few minutes before opening.
These would also be a fun camping food to make.
I'd love everyone to post more easy snack recipes.

That sounds fantastic. I like to make tacos in a bag. Here is the recipe:
Snack size bag of tortilla chips or doritos Pound of ground beef or turkey shredded cheese sliced olives guacamole sour cream diced onion salsa
Open the bag of chips and crunch them up a bit if you want. Than just start adding the toppings as listed above. This is a great snack for campouts and pot lucks. Just provide some forks and enjoy:)

At a market sale the "taco in the bag" was a BIG hit! I had never seen it before, and it was a terrific way to look around while having lunch.

What a great idea. I LOVE tacos and this would be such an easy way to eat them when you're 'on the move' .

I've never heard of those, RoseMary! I bet they're good.
And Vintage Girl...can't get easier than tacos in a bag! I could easily modify the recipe to make it vegetarian too. Great!

Lately I've been making cucumber rounds with cream cheese topping to take to parties as an appetizer. I let cream cheese get soft, mix in a generous amount of dill (fresh or dried) and put it in a cake decorating bag with a big star tip. I slice cucumbers into thick slices and let them drain on paper towels for awhile, dry the tops (so the cream cheese stays on) and then pipe on a big dab of cream cheese and top it with a bit of smoked salmon. It was a huge hit. I did the same thing on crackers, too, when I ran out of cucumbers. When you serve the cucumbers and/or crackers with some nuts, some green olives, and a nice bottle of wine, you almost don't need dinner.

Those cucumber rounds sound good. I'm going to try them this summer.
I think cream cheese on anything is good. I love it on Ritz crackers with dried cranberries on top.

Love the sound of the cucumber rounds--- now I can't wait until the summer markets are open for business. On the Eastern Shore was have some amazing vegetable stands with the best corn on the cob, and tomatoes I've ever had!

Taco's in a bag -- that brings back some good memories! As I recall, those were introduced at the 1982 World's Fair which was held near here in Knoxville. As the Fair was billed as "Energy Expo," the dish (or bag . . .) was called a "Petro." They were quite popular, and after the Fair closed, some guys opened a fast food type restaurant called Petros. It operated for years in Knoxville -- don't know if the restaurant made it anywhere else. I think it is no longer opened here, but I don't know for sure. Yep, I ate my share of Petros back in '82, but probably have not had one since.
Just a bit of useless trivia for our new board!

I saw this recipe on Facebook today and thought it looked easy and yummy:) I think they would be good dipped in salsa!
Jalapeno Bites
1 (8 ounce) package cream cheese, softened 8 ounces grated parmesan cheese 3 tablespoons chopped jalapeno peppers 2 large egg yolks 2 cups dry breadcrumbs
Directions:
1 Preheat oven to 350°F. 2 Combine the cream cheese, Parmesan, jalapeño peppers and egg yolks in a bowl and mix to form a paste. 3 Shape a 1/2 tablespoonful at a time into 1/4-inch rounds and roll in the bread crumbs. 4 Place on an ungreased baking sheet and bake for 10-15 minutes or until golden brown. 5 Serve warm.

Oh that sounds delicious! I love anything with Jalapenos ;D My ulcer does not like them though I absolutely love stuffed olives. I buy the large pitted olives and stuff them with cream cheese. You can use plain cream cheese or mix in pimento's, chopped olives, onion, etc. It is such a simple and easy snack. But it looks great on a buffet table and kids love them.

I'm very conscious of eating well and shudder when I look at the ingredients on granola bars and the like. Here's a simple, healthy recipe for energy bars from Sheknows.com No baking required!
HOMEMADE CINNAMON ENERGY BARS
Makes 8 bars
Be sure to use fresh, soft dates rather than dried ones to get the right consistency. The small pinch of salt really sets off the flavors here, so don't skip it!
1 cup pecans 1/3 cup whole flax seeds 1 cup rolled oats 1 cup pitted fresh dates 1 tablespoon ground cinnamon 1 pinch salt
Directions:
Add the pecans to the bowl of a food processor and pulse until the pieces are roughly pea sized. Add the remaining ingredients and process on high until the dates are pretty evenly distributed. The mixture does not need to be completely smooth, just incorporated enough to hold together. Line an 8-inch square baking dish with parchment or aluminum foil. Press the mixture into the pan until evenly distributed, making sure to press it all the way to the edges. Move the pan to the refrigerator for at least an hour before cutting into 2 inch x 4 inch bars.

Sounds yummy! I love energy bars, but most of them are not good for you at all. This one sounds delicious and it is healthy also. I will give it a go this weekend
